🍂 Healthy Pumpkin Chocolate Chip Muffins 🍂
Ingredients (makes ~12 muffins):
- 1 ¾ cups whole wheat flour (or 1 cup whole wheat + ¾ cup all-purpose for lighter texture)
- 1 tsp baking soda
- ½ tsp baking powder
- 1 ½ tsp cinnamon
- ½ tsp nutmeg
- ½ tsp ginger
- ¼ tsp cloves (optional)
- ½ tsp salt
- 1 cup pumpkin purée (not pumpkin pie filling)
- ⅓ cup melted coconut oil (or olive oil/neutral oil)
- ½ cup SHoney Honey
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup plain Greek yogurt
- ½ cup dark chocolate chips (plus a few extra for topping)

Instructions:
1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease.
2. In a medium bowl, whisk flour, baking soda, baking powder, spices, and salt.
3. In a large bowl, whisk together pumpkin, oil, honey, eggs, vanilla, and Greek yogurt until smooth.
4. Gently fold in dry ingredients until just combined — don’t overmix.
5. Stir in chocolate chips.
6. Divide batter evenly into muffin cups (about ¾ full). Sprinkle a few extra chocolate chips on top.
7. Bake 18–22 minutes, until a toothpick comes out clean (a little melted chocolate is okay!).
8. Let cool in the pan 5 minutes, then transfer to a wire rack.
