Make It Monday - Thanksgiving Side Dish

Roasted Carrots with SHoney Farm Infused Honey & Herb Butter

Ingredients
  • 2 lbs whole carrots, peeled
  • 2 tbsp olive oil
  • 2 tbsp SHoney Farm infused honey. (Lavender, cinnamon, vanilla, or raspberry jalapeño, chipotle, or pineapple ghost pepper infused honey all work — each gives a different vibe!)
  • 2 tbsp butter, melted
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: fresh thyme or parsley, toasted pecans, or a crumble of feta
Instructions
1. Preheat oven to 425°F. Line a sheet pan with foil or parchment.

2. Toss carrots with olive oil, salt, pepper, and garlic powder.

3. Roast for 20 minutes, flip, and roast another 10–15 minutes until they get those caramelized edges.
4. Whisk together melted butter + your SHoney infused honey of choice.
5. Drizzle the honey-butter glaze over the hot carrots and gently toss so everything gets glossy and golden.
6. Finish with herbs, nuts, or feta if you want to be a little extra (highly recommend).
